Start your mornings right with almond flour cinnamon pancakes! There’s no feeling like getting up and making a yummy breakfast that actually isn’t bad for you! I know, almond flour, what is that? I’m new to it too.
I discovered it during my Arbonne 30 Days of Healthy Living Challenge, and I’ve continued using it ever since. I will say that it is pretty pricey, but it’s the only expensive ingredient in this super simple recipe! A lot of times when we eat breakfast foods, they’re loaded with carbs, and sugar. Starting your day with sugar is one of the worst things you can do! It sets you up for a day of poor eating choices.
However, you won’t have this dilemma with these almond flour cinnamon pancakes. There is no added sugar to this meal! All the ingredients are clean and lead to a healthy digestive system. Without having to break down the gluten and wheat that’s in regular flour, your body can operate so much better. The best part is, they taste like regular pancakes! Sure, you’ll be able to tell the difference, but not because these are gross. The almond flour has a distinct, yet subtle taste.
In addition to healthy pancakes, a highly recommended syrup substitute is agave. Agave is like a healthier syrup or honey that is inexpensive and can be used so many times throughout the day. You’ll be upset that you’re just now discovering it! I know you’re busy and on a tight schedule and budget. However, that doesn’t mean you have to sacrifice your diet or workout efforts.
So regardless if it’s a Saturday morning or a Tuesday night of late munchies, this recipe is exactly what you need so let’s get started! The following recipe yields 2 pancakes so change the proportions as necessary.
Ingredients
- 1/2 a cup of almond flour
- 1/4 tsp of baking powder
- 1/8 tsp of salt
- 1 egg
- 1/8 cup almond milk
- 1/2 tsp melted coconut oil
- 1/2 tsp vanilla extract
- 1 tsp cinnamon
- spray cooking oil
Cooking Instructions
- Put all ingredients besides the cooking oil into a bowl and whisk together until a homogenous mixture.
- Heat a skillet or pan to medium and spray with cooking oil.
- Pour about 1/2 cup of mixture onto cooking surface. When it begins bubbling, flip to other side.
- Cook slightly longer for darker sides, but it will be a little lighter.
- When both sides are cooked, plate it, serve it, and enjoy!
